The freeze-drying process also preserves the valuable nutrients of the fresh fruit. Dried bananas are rich in minerals such as potassium, phosphorus, selenium and magnesium, as well as B vitamins, vitamins A, C, D, E and K. They also contain fibres, which promote a smooth digestion.
